Watermelon Tanghulu Recipe
Materials
- 4 cups Watermelon cubes
- 2 cups Sugar
- 2 cups Water
- 1/4 cup Lemon Juice
- 1/2 tbsp. Black Salt
Instructions
- Cut watermelon into cubes and pat dry with the help of a kitchen towel
- Pierce each watermelon cube through the top with a toothpick or wooden skewer. Set aside
- Add sugar and water in a saucepan. Mix until well combined. Cook until sugar dissolves, bubble forms, and the mixture becomes golden
- Add lemon juice at this stage and insert a candy thermometer. Remember not to skip lemon juice as it prevents crystallization of sugar syrup, and you get a fine crunchy hard shell every time
- Heat until candy thermometer temperature reaches to 305F. It is hard to crack temperature-most suitable for perfect candy making.
Notes
- You can also cut watermelon in a triangular shape with peels.
- Refrigerate watermelon before coating it into caramel mixture. This step prevents syrup from sogging during the coating of fruit with sugar syrup.
What to Do If You Do Not Have A Candy Thermometer?
- Take a bowl, pour chilled water.
- Add candy mixture with a spoon in chilled water. If it hardens immediately, then it’s is the right temperature for coating candy mixture with fruits.
- Quickly, dip watermelon cubes into the syrup carefully.
- Twist skewers to cover well the syrup to fruit.
- Drip off any excess sugar syrup.
- Place coated watermelon cubes into a parchment paper or silicone mat.
- Keep watermelon sticks at a distance to avoid sticking. Watermelon will harden in 3-5minutes.
- tanghulu is a quick-serve dessert; ensure to serve within 20 minutes for best results because it will liquefy with time.
- Its hard coating would remain crispy.
Best Variation of Candied Watermelon Tanghulu
- Place the whole watermelon on parchment paper.
- Pour prepared candy mixture onto a whole watermelon and leave until candy coating hardens. Serve immediately.

- Reheat the candy mixture, add enough water to make its consistency thin.

- Pour some water into your saucepan and boil for 10-15 minutes on medium flame. The candy mixture would leave the pan’s bottom, and you can easily wash it with your dishwasher bar.
- Pour hot water into your pan and leave for 1/2 hour. Hot water will dissolve the hardened or burnt. Your pan will clean perfectly. Wash as usual.
